It is a method of preservation that is widely used in the United States for Frozen Yogurt, the durability of the mixture is about 9-12 months and the containers must follow the cold chain (-18 ° / -22 ° C).
Before proceeding with the use of the mixture a slow thawing is necessary to restore its liquidity.
This takes place in the refrigerator at + 4 ° C in about 24-48 hours. The liquid mixture obtained lasts 8-10 days, always keeping it in the fridge and in a closed container. If the container is open, the duration of the mixture drops to 72 hours, always at + 4 ° C.
